I was inspired to change up my traditional burger recipe and since i seemed to be on a bit of an asian kick at the moment, i made a flavour bomb vietnamese paste with lemongrass, ginger, garlic and soy, and mixed it into the ground beef to marinate for 2 hours in the fridge.
I just LOVE these flavours, and they take me back to when i was travelling around Vietnam and Thailand. I would give anything to go back there and travel around with Heidi and Sienna. ....But It's probably best to wait until Sienna can actually start eating and can appreciate the flavour combinations they use !
I cannot wait for that trip a few years down the line :)
For the beef burgers:
Then in a food processor, mix together........
mix it together with the ground beef, then form 2 large patties, slightly flatten.
...........These get cooked on your preheated bbq grill on high heat for roughly 8 minutes a side,
For the Spicy Pineapple Salsa, Mix this together in a bowl.....
Yam and Potato Fries Medley with a lime zest salt

- 350 g of ground beef (not extra lean)
Then in a food processor, mix together........
- 1 garlic clove
- 1 inch piece of ginger
- 1/2 Tbs of lemongrass
- 1Tbs soy sauce
- 1 tsp of fish sauce
- 1/2 red thai chilli
- 1tsp sesame oil
- 1/2 shallot
- 1 Tbs cilantro
mix it together with the ground beef, then form 2 large patties, slightly flatten.

- top on a ciabbatta bun with a bit of mayo and cilantro, top with your pineapple salsa (recipe below)
For the Spicy Pineapple Salsa, Mix this together in a bowl.....
- 1 cup of fresh pineapple - small cubes
- 1/2 cup cucumber - small cubes
- 1/3 cup chopped cilantro
- 1/8 cup jalapeno ,seeds in, finely diced, roughly half a large one (you can add more if you like it super spicy!)
- 1/2 shallot - finely diced
- 1/2 lime - squeezed
- a few drops of fish sauce
- salt and pepper to taste
- cut a few extra pieces of fresh pineapple to grill on the bbq to get a nice char on both sides
Yam and Potato Fries Medley with a lime zest salt
- roughly 5 minutes on 180 degrees in the deep fryer
- fresh lime zest grated into the sea salt afterwards to season......yummy!
