Who doesn't love layering and loading up those tortilla shell's (soft or hard) on a friday night, and sinking back a couple cold cerveza's with a wedge of lime! ....another little piece of heaven.
These dishes are easily elevated with fresh ingredients and you can't really put a foot wrong, they are kinda bomb proof that way!
From shredded beef, to pulled pork or grilled chicken breast, so many protein options for your mexican fiesta.
Tonight i opted for ground beef as we already had some defrosted. You can elevate this dish with good quality free range ground beef that actually tastes like it should, the difference in quality is obvious and you will never look back.
Brown off the meat in a heated, un- oiled frying pan. As it cooks, no need to strain the oil as it is good quality and will add to the flavour.
Throw in the spice mix from your taco kit and 1 cup water, leave to simmer. It will slowly reduce and thicken.
I like a little bit of spice so i add a 1 tbs of sriratcha.
If you have fresh chilli's, i would finely slice up a medium sized red or green one and toss it into the pan in place of the sriratcha.
You just gotta have Guacamole. Mash up 3 decent sized avocado's until smoothish. Having a few chunks just adds to the rustic-ness.
Squeeze a lemon and a lime into the mash. The lime takes the guacamole to a new level and is a must.
quarter 6-8 cherry tomatoes and thrown them into the mix.
Don't forget to season, 1 Tsp pepper, 1 tsp salt. you can add more as you taste. always start with less as you can never go back.
and lastly 1/2 cup chopped cilantro.
Get you other garnishes ready, chopped crisp lettuce, more chopped cilantro, grated old english white cheddar with a bit of a sharp nip to it.
Put the taco shells in the oven to warm for 5 min on 375 degrees.
Time to layer and load up !

....and therein lies the beauty, taste's magic both ways!
