The Turkey Burger has become the healthier Go-To of the BBQ season and is a staple of mine throughout the summer, with different variations of toppings and buns. They are extremely tasty !
For turkey burgers, ground turkey with anything leaner than 10 % fat will get you tough and dry patties. This is a culinary sin!
Having that little bit of fat adds flavour and moisture, as well as ensuring your have a much tender burger in your hands. So always go around 90% lean.
For these you will need....
1 package of ground turkey 300-350g (makes 2 larger patties )
In a mixing bowl add 1/4 cup finely chopped red pepper,
1/4 cup finely chopped red onion,
1/8 cup chopped cilantro,
1/8 cup chopped parsley,
1/3 cup grated old white english cheddar (or 1/4 cup feta works well too),
1/2 tbs black pepper,
1 tsp salt,
1/2 tsp chilli flakes,
1 tbs of grainy mustard,
Mix in the ground turkey and thoroughly combine with your hands.
Form into 2 large burger patties, uniform in shape and quite thick.
Cut a few thick slices of red onion, but keep them whole, to place on the grill for your burger toppings.
Place patties on your pre-heated bbq grill on high heat, leave for 10 min.
Flip and leave the other side for another 8 min. place your onions on the grill during this time. 4 min a side to char will be perfect. place your buns on the grill for a quick toast as well in the last few minutes.
If you have a meat thermometer you will be looking for 165 F in the centre of your burgers. Don't let it go above that, in fact try take them off when just before as they will carry on cooking for a couple minutes afterwards.
Assemble the goodness and grab a glass of white wine.
