This dish is one of our summer staples and the glaze on the pork keeps them juicy,tender and unbelievably flavorful.
You baste each side of the pork as you turn them on the bbq infusing more moisture and flavour into the meat as it grills. When you turn each side of the skewer and see the charred meat as you turn it's like waking up on christmas morning and seeing a heap of presents under the tree with your name on them all! I love to eat with loads of colour as well and this dish doesn't disappoint. You can mix up with any veggies you like, but i went with red onion, orange,red and yellow sweet peppers, zucchini, cherry tomatoes and mushroom. Serve in a pita topped with a homemade tzatziki.
I didn't have time to do the final display. it was more hurry up, cook and eat kind of night as Sienna is teething at the moment and going to bed much earlier which is right around our normal dinner time, so i have to pick and choose my blog nights according to the situation on hand.
There are some amazing and inspiring food blogs out there and now that i'm slowly going down this road and have gained a small amount of experience with the display side, photography and lighting, I'm wondering how the hell some of these bloggers get the time to do all the amazing setups of food that i've seen! .....So intricately done, creating a beautiful mess that's now very clear to me that it took them a fair while to perfect.
I definately know for a fact that nobodies food is still warm by the end of it and there is a tornado of mess all behind the lens to clear up.... or maybe that's just me!
Ingredients for the marinade
1 pork loin - cut into cubes of your liking, but not too small.
marinade overnight is best or at least 2 hours in the following:
1/2 cup soy sauce
1/4 cup grated ginger
1 Tbs sriratcha
1/2 cup orange juice
1/2 cup water
Keep the mixture for glazing the pork with after it's finished marinating. You will need a glazing or pastry brush.
Chop all your veggies and before skewering place in a bowl, drizzle olive oil, season with salt and pepper and squeeze less than half a lemon. Mix around, Then skewer as you like.
The pork takes roughly 24 minutes on high heat, 6 minutes a side, remember to glaze with each turn.
The veggies about 15 minutes, until softened with a nice char on a couple sides.
For the tzatziki
2 cup greek yogurt
1 cup finely chopped cucumber
1/2 squeezed lemon
2 clove garlic - minced
1/4 cup olive oil
salt and pepper to taste
Unskewer one of each on a warmed pita, top with your very own tzatziki and enjoy !
