With just the sniff of a rainy evening in sight was enough reason for me to want to make this dessert which is very nostalgic and brings back good memories of growing up in South Africa. Its sweet, warm and absolutely killer!
This dessert is of Cape Dutch origin and came across to South Africa with the Dutch in the 1600's. God bless them!!!
It is served warm, traditionally with hot custard and/or ice cream.
Sienna's 84 year old great-grandmother who was over visiting said she would pack me into her suitcase and take me home after eating this! Compliment accepted!
It's truly comfort food all the way, you just close your eyes and accept the warm embrace with each mouthful!!!
Ingredients
1 cup flour
1 tsp baking soda
1/4 tsp of salt
1 egg
3/4 cup brown sugar
2 Tbsp apricot jam
1 Tbsp butter
1 tsp of white vinegar
1 cup milk
For the sauce:
1/2 cup cream
1/2 cup milk
3/4 cup white sugar
1/2 cup boiling water
1/4 cup butter
2 tsp vanilla
Directions
1. Sift together flour, bicarb and salt.
2. Beat the egg and sugar well in mixer until a smooth whipped like consistency
3. Melt the butter and along with the vinegar and apricot jam add to the egg mixture.
4. Add the liquids alternately with flour to egg mixture and beat well until smooth like consistency.
5. Pour into a greased dish and bake at 350 for 45 – 50 minutes until lightly golden in colour.
Sauce:
Put all the ingredients together in a saucepan and bring to a boil, until the sugar dissolves. Poke holes in the pudding as soon as it is out from the oven and pour over the pudding. Let it stand for 30min or so to get absorbed through.
Serve with warm vanilla custard or ice cream (or both!)
