Last night was one of those nights where you literally have zero ingredients left in the fridge, its already going on 7 'o clock and i'm thinking what the heck are we going to eat tonight? I've just started a blog, the pressure is on ! , so it wouldn't look good if i'm taking photo's of toast and cereal.
I had 2 Chicken thighs, half an onion, 2 peppers, a jalapeno, a small stick of chorizo and a store bought alfredo sauce. When in doubt, throw them all together!
First i cut the chicken into bite size strips, and place in a bowl into which i drizzle some extra virgin olive oil, season with
1 tsp of pepper,
1 tsp of salt,
1 Tbs dried herbs or fresh if you have them,
1 tsp of dried chilli flakes as well.
Fry off the chicken and chorizo first until crispy brown on the one side, then flip over, add your onions and peppers and half a diced jalapeno into the mix. I de-seeded these as they pack a punch, but that's totally up to you.
let cook for 5 min, then add your alfredo sauce ***
***(The store bought sauces can be pretty good, but most of the time are under seasoned and need a bit of jazzing up, this alfredo sauce has a good foundation, but i add 2 cloves extra garlic, 1 cup grated cheese and a squeeze of fresh lemon after adding it into the frying pan).
Let simmer for 8-10 min on low heat.
Once your pasta is ready, strain and add straight into your frying pan to get all aquainted with all of that good comforting goodness.
Yum! the chorizo and small bits of diced jalapeno definately make this dish.
